When I was growing up I wouldn't eat bananas very often because I knew if I let them get black and ripe my Mom would make banana bread. During the recording of Perfect World and Falling Down my Mom made several loafs of homemade banana bread which where enthusiastically devoured by everyone at the studio. We enjoyed it so much I thought you might like this long time favorite Hale family recipe. Will Hale

Yummy Banana Bread

2 eggs
1 cup sugar
1/4 cup shortening
3 ripe bananas – mashed
3 tablespoons sour milk (add 1/2 teaspoon of vinegar to milk to make it sour)
Cream above ingredients in a mixing bowl.
Then continue to add and stir together the following ingredients.
1 teaspoon baking soda
dash of salt
1 3/4 cup flour

Lightly grease a preferably 12” x 4” x 2 1/2” cake pan and pour in the mixture.
Bake at 350 degrees Fahrenheit for approximately 45 minutes.
The top will get browned and you can test to see if it’s finished baking by putting a knife
or toothpick in the center and if it pulls out clean it’s finished!
Let it cool for 5-10 minutes before removing from the pan.
